Q. What is the difference between USA onion and onion from other regions?

A. Over the years, the major USA onion processors have invested a lot of time and money cross-breeding onion strains to develop a "high solids" or low moisture onion variety. The major cost of dehydration is the gas fuel costs to run the dryers. Hence the high solids variety requires less energy to dehydrate.

This particular strain of USA onion has a distinct flavour and colour profile which is generally accepted as the best. However processors in other parts of the world are now purchasing the high solids seed and growing this variety in other countries.

The quality systems of the USA processors is also traditionally the best in the world, however this is also changing.

This same breeding process has also occurred in the USA for garlic varieties.

Q. Why are some Paprika powders hot rather than sweet?

A. There are many different varieties of capsicum (bell peppers) and all of them have different characteristics in relation to heat and colour. Capsicums are part of the chilli family and we all know how hot Birdseye Chillies are!

The traditional Hungarian Noble sweet variety paprika was the mainstay of the paprika industry for many years. However, as sources of cheaper paprika have been sought after, countries such as Spain, Israel, South Africa and South America have gained prominence.

The varieties grown in these different regions can have different heat levels, hence the variations. Also the lower ASTA colour unit paprikas (e.g. 60 ASTA) have more paprika seed ground into the powder to lower the ASTA colour value and make the product cheaper. The heat component of capsicum/chillies is capsaicin and is found in higher concentrations in the seeds. Hence lower ASTA paprikas have a tendency to have higher heat levels.
